About
Nearly a century ago, William Kryskill promised his beloved wife, Clara, that he would build her a castle in the bucolic countryside of Moon Township, just 20 minutes northwest of Pittsburgh.
Beginning in 1931, the couple spent each summer running a tea room in Connecticut, all the while working on Hyeholde each fall. In 1938, after seven years of building their cottage by hand, they served their first meals.
To build the Tudor-style residence, they sourced much of the materials from the surrounding land and nearby barns. Exposed wooden beams line the ceilings, with dark slate floors underfoot. Gorgeous stained-glass windows, vintage wallpaper, tapestries, and statement chandeliers are also featured throughout.
In 1997, Chris O’Brien became the chef. Restaurant ownership changed hands a couple of times until, in 2023, O’Brien also became Hyeholde’s owner. His menu emphasizes vintage culinary techniques, from cassoulets and homemade foie gras to game meats. With four acres of lush gardens on site, Hyeholde is able to source fresh produce from its own land, including herbs, fresh fruit, and apiaries that produce 150 pounds of honey annually.
The charmingly rustic yet refined cottage aesthetic calls for an elevated dress code today: no flip-flops, tank tops, or team attire is allowed.
Order a chef-inspired basket and dine al fresco on the grounds or enjoy a special meal in the charming stone-and-glass design of The Round Room, a popular draw for weddings. Cooking classes, and meals at in-kitchen chef’s table are also held throughout the year.
